What You Will Need

·        4 eggs

·        3/4 cup of sugar

·        3/4 cup of sifted cake flour

·        1 tablespoon of vanilla

·        3/4 teaspoon of baking powder

·        1/4 teaspoon of salt

·        Sifted confectioners sugar for dusting

·        Whipped cream

·        1 cup of jelly or jam, well stirred

·        A small bowl

·        1 15 by 10 by 1 inch jelly roll pan

·        Wax paper

·        Clean towel

·        Sharp knife

·        Cooling rack

 

What to Do

·        Preheat the oven to 400 degrees F

·        In the small bowl, beat the egg whites until stiff, but not until dry

·        Set the eggs aside

·        While mixing, gradually add in the vanilla and sugar

·        Sift the baking powder, flour and salt together

·        Add the flour mixture to the egg mixture

·        Fold the egg whites into the egg mixture

·        Line the 15 by 10 by 1 inch jelly roll pan with wax paper

·        Pour the batter into the jelly roll pan

·        Bake until the cake is golden brown, about 8 to 10 minutes

·        When the cake is cooked golden, remove from the oven

·        Loosen the edges of the cake

·        Dust the clean towel with confectioner’s sugar

·        Invert cake onto the sugar dusted towel

·        Peel the wax paper off the cake gently

·        Using the sharp knife, trip 1/4 of an inch of the hard crust off each long side of the jelly roll cake

·        Beginning with the narrow side, roll the cake and towel up together

·        Place the jelly roll cake onto the cooling rack, seam side down

·        Cool for between 10 to 15 minutes

·        Once the cake has cooled, unroll it gently

·        Spread the cake with the jelly or jam

·        Re-roll the cake

·        Sprinkle the cake with confectioners’ sugar

·        Cover the cake with whipped cream

·        Serve
